This “Tangerine Adobo Chicken” recipe includes orange flavored juice and chipotle chiles. I might try it with boneless chicken, though.

Corn Salad

My mother always made a version of corn salad for me growing up. Cheese, mayo, corn and lime — very yummy. This recipe from Presley’s Pantry, “Warm Mexican Corn, Black Bean, and Cotija Salad,” is a little more involved but basically the same thing. Try it.

Crock Pots

My sister-in-law is a big fan of crock pots. “Easy Crock-Pot Broccoli Cheese Casserole” sounds it might be a winner as a first-time try.

Cream Cheese Spread

I found this easy recipe for making your own, homemade herbed cream cheese spread. You can modify the recipe to suit your taste.

Fried Chicken

I’m probably never going to make this myself, but I’m a big fan of extra-crispy fried chicken. I crave it frequently. Now I just need to find someone to cook it for me.

Hummus

I’m always trying new Hummus recipes. Weelicious has this easy “Cheesy Green Hummus” recipe that’s made with spinach and Parmesan.

Lunchbox recipes

Mama Latina Tips has a very cute, and yummy, idea for Mexican Molletes. The recipe includes English muffins, mango with chile, and queso fresco. It’s a great Bento Box idea. And, since I am all about the lunchbox ideas these days, I love it.

A great way to pack meatloaf for lunch is to make it in easy-to-pack muffin cups. This recipe for “Chicken Parmesan Meatloaf Bites” is a great variation on an old favorite.

Peanut Butter Dip

Weelicious Lunches posted a great recipe for Peanut Butter Yogurt Dip. This is one I actually already make myself. However, I use crunchy peanut butter and every once in a while I substitute one tablespoon of PB with Nutella.

Snacks

In the “quick and easy snacks” list, this Apple and Goat Cheese Crostini recipe from Modern Mami fits the bill. It’s also very yummy. A must-try.
